Glad you’re all recovered from COVID.
My vet will neuter as soon as they have their permanent teeth. A quick search suggests they lose the baby teeth at 3.5 - 4 months and then the adult teeth grow in, so I guess 4.5 - 5 months?
She looks Marvel-ous!! She’s got that sassy princess face of a kitteh who knows she is loved. As far as spaying goes - do it as early as your vet allows. Females can get pregnant as young as 4 months old, and no sense taking the chance if she accidentally gets out and meets neighborhood Tom. My cats have all been pediatric spays/neuters and have lived ripe ole healthy lives.
I am really proud of you for taking this furry project on! As others have mentioned, the ‘rescue expert’ community is full of well meaning people who don’t always live in reality. I work with a rescue for TnR have stopped fostering for them since their adoption guidelines are insanely strict. SO strict it was preventing kittens from getting a home. Rules like, must adopt 2 kittens at once, must show video tour of home, must agree to check-ins after adoptions etc was just too much. There are so many cats who need homes that honestly, you want to do some screening, but ultimately the goal should be for the cat to be happy, not to live in a pampered palace.
