It’s alright to ride whatever you want to ride and whatever you feel comfortable on.
But you owe him a duty to ensure that he is properly conditioned and adequately prepared to hunt the territory you are asking him to hunt and do what you are asking him to do.
As long as you do that and turn yourself and your mount out appropriately you should be fine.
