We can also ride and train most of the time in the light English saddles and only use the heavier western ones for a few days before a show and for when needing those specific saddles.

So, I am not sure if this is an actual perception that Sydney has, or if it is just me, but when I ride her in my english saddle I find it hard to get her to jog, vs when I ride her in her western saddle when I can get to jog as well as lengthen out into her english trot. In the english saddle it is english trot the whole time. Otherwise I would totally just school in a dressage saddle all the time.
