I think mostly because people assume lighter colored tack is not oiled, so therefore not cared for properly/stiff.

Can confirm this My saddle is lighter leather than never really darkened all that much. The saddle is 20 years old this year and still in really nice condition, so I think I have done pretty well with caring for it - despite appearances
