I have had much success with hermes and butet on high withered tb types!
Most higher-withered horses are better served with a wool-flocked panel, often (as vxf111 stated) with a K-type panel and perhaps a full front gusset to help support the front of the saddle along a higher wither. Sometimes a deeper rear gusset is necessary to bring the rear of the saddle up high enough so it sits in correct balance. Some of the foam-paneled saddles offer modifications like these, but often the panels are too thin and require shim pads to make them sit properly.

I went with Bruno Delgrange Athena for my TB. He’s not excessively high withered, but he’s got a typical TB back and is quite narrow. The only other saddle I had on him that worked was a Black Country.
I adore my BD and am saving to purchase another for my new mare.
I have a Voltaire for my high withered TBx and it fits her great. I would figure out what saddles you like and then have some reps come out.
IIRC the OP found a saddle already and it’s a Stubben.
