I think the best option is to put the valve somewhere that the horse can not play with it.

Yes. My plumber put it in before checking with me, and he’s not horsy. It’s an easy cheap fix, I just have to do it. I still wouldn’t do anything different with the design/layout. Saves a ton of time.
I personally would prefer the quarter turn ball valve to the gate valve.
It is good that people know to think about there are options and they can decide which they like best.
This is exactly what I am planning. I have Nelson’s outside, but in the barn it is heated buckets. I’m going to use PEX to each stall and drain after watering in the winter.
