My Passier dressage saddle is amazing - and a saddle fitter was in shock when we did a fitting at my barn - the older PS Baum tree fit EVERYTHING. I have an Andy x QH and my TB, and it fit BOTH. I then bought an AP on eBay built on the same tree for low level jumping/trails, etc. Same thing - fits everyone.
Have you looked at Tekna?
Synthetic but with wool flocking and changeable gullet.
Another vote for Passier… I got a nice Passier Nicole’s Grand Gilbert for $600 this summer. Had the flocking adjusted slightly and it fits my TB perfectly. My saddle fitter commended me for the great find.
One more vote for Passier. I bought my Grand Gilbert with the extra gusset new 15 years ago and love it so much that when the seat wore out I had it replaced. That medium tree saddle has fit every horse I’ve owned well as the wool flocking made it easy for my saddle fitter to adjust to each horse.

Thorowgood, inexpensive, wool flocked and they fit most TB’s very well.
Second the Thorowgood. My curvy-backed, long-withered TB is quite happy in my T6.
Another vote for passier. If you do go for a stubben, make sure you can demo it as someone else already mentioned. Personally, i hate the way they ride as dressage saddles. Now, my stubben jump saddle completely different story. The dressage stubbens tend to have horrible resale value also, FYI.
