I have a 15.1 pear too!!! Have tried so many of the above suggestions and still ended up over her withers! The key for us was a flat tree from front to back, so for example the Stubbens were a terrible idea as they are more curvy. Even the wintec Isabel rocked up her neck. We had good success in an older Albion comfort for dressage. Now she has a gorgeous Black Country Solara Vinici(monoflap) xc saddle that fits her like a dream and we do everything in it because she rejected her previously fine dressage saddle once we got the BC.
Once we figured out that we needed a flatter tree front to back, finding options became easier. Several saddles designed for more baroque backs are good possibilities too. Basically, she has a flatter back and more curved trees were very slightly rocking (i couldn’t feel it), this motion coupled with her pear shape was shoving the saddles up her neck! Good times!
