Robby - don’t leave out St. Lucia. I got married there (on the beach, of course!) back in '89, & back then it was rural & relatively undeveloped - but that’s what made it so special (& adventurous to say the least). I’ve heard that it’s much more touristy/developed now, but the beaches are fabulous, & you can’t beat the riding, where (at least back in '89) you got to gallop hell bent for election thru the surf - just like in the TV commercials (the stables there are - or were - all English tack, in various degrees of solidity).
You should have seen me - in SNEAKERS no less - trying to pull up the mount they gave me - a 2-year old Anglo-Arab that had just been broken to saddle the week before. My new husband said he put the camera up to his face to take a pic of me & I was already, like, 5 miles down the beach! Thank God I had the foresight to tell them in no uncertain terms that my husband had NEVER ridden before, otherwise it could have been one of the shortest honeymoons in history. Guess they were still working the bugs out of the “Horses For Hire” tourist business. . . … 
But really - St. Lucia is truly one of the undiscovered beauties of the Carib.
My body is a temple - unfortunately, it’s a “fixer-upper”.
