Can anyone tell em the other ways of using a 2 ring gag like this one http://www.thehorsebitshop.co.uk/product.php?xProd=606&xSec=1 other than just the usual single rein, would I be able to use pelham roundings or would split reins be better?

I would just use a single rein. You can hook the cheekpiece into one loop, and the rein to the other or attach the rein outside the loop (only the cheekpiece fixed). I’ve also seen it set up using gag cheeks run through the loops, then you could use a second rein for a snaffle effect.
I don’t think that “gag” is necessarily the right name for this type of bit; I would have called it a “wilkie” - commonly used on ponies to give a little more steering and better brakes. I would see it as more akin to a hanging cheek/baucher snaffle in terms of strength. While it is a leverage bit, it would be much further down the line in terms of strength than a traditional gag or a dutch gag.
One set of reins though - as suggested above, cheek piece through one gap and reins through the other or for less leverage cheek piece onto the ring and reins through one of the gaps. Also less likely to cause issues with less quiet/experienced hands that the aforementioned members of the gag family.
Nice bit though - snaffle with a little something extra - a friend of mine used one with a narrow mouthpiece on a harder-mouthed horse and it worked well; not necessarily just for the more forward going horse.
