We signed up for a CSA this year and are flush with vegetables that we don’t know what to do with. My horse has been enjoying the green carrot tops (we eat the carrots!) but what about beet greens? Okay to give to horses?
Beet greens are delicious! cook with onion and garlic and butter or oils, puree. You can freeze for winter enjoyment.
I can’t imagine they would not be good for a horse as well.
Google says they are not toxic to horses.
But I agree w/@demidq - beet greens are very tasty fresh as salad or cooked as described.
BTW: you can also eat the carrot tops, but only raw as in salads. they are more herblike than main-dish-ish.
What do beet greens taste like? Are they like collard greens? Also you said that carrot tops are more herbike, so would you only use a small amount in a salad? I never knew you could eat carrot tops.
Beet greens are softer than collard greens and have a bit of that mineral bite you get from spinach. I once ate a most delicious Ukrainian dish. It was little bits of raw bread dough rolled up in beet greens, covered in butter and dill, and baked in layers in a casserole dish. You would need a whole prairie garden full of beets to make that.
My CSA box never gave me enough beets for that so if the beet tops weren’t too raggedy I either tossed them in with the borscht or into the sauteed kake.
So it is! Thank you so much for the tip! I just googled and there are a bunch of recipes for it! I wonder if you could make it with spinach as I will never have enough beet leaves at one time?
Thanks all! We have so many veggies that I’m happy to share with my dogs and horse. The dogs have been enjoying steamed savoy in their breakfasts too.
I would kill to get fresh beet greens. Steam them, saute in butter, chop for salads or shred and top your borsht with them and give the horse carrot tops…they are too good to share.
Beet greens taste like a milder swiss chard, they are in the same family You could make your ‘beetniks’ with swiss chard leaves!
