Sounds silly but I often use my dogs nail trimmers. It’s a trick a vet showed me. They are sharp and as long as you can hold the sides of the pill gently it works.
I worked in vet clinical , feline only, and used a nail trimmer, It was a scissor type, not the larger guillotine dog type. You dont apply much pressure, just a little nudge
Yeah, trying to use a small knife resulted in each quarter ka-pinging opposite directions across the kitchen. Luckily the blue stands out and I found both pieces.

The nail clippers I was referring to is called a White scissor nail clipper. Took my brain a while to find that old info. Empty gelatin capsules help make dosing those little fragments easier
