I’d like some recommendations, the good, the bad, and the ugly. If we can stay under $50 that would be nice.

I’m following this too. I have a CeeCoach as well and the ear piece does not stay in my ear.
I don’t know how CeeCoach works, but I just got these to use with my phone for Ride iQ and like them so far.
ETA when not on my phone - These stay on my ears easily with my helmet on. They have a physical button so I can hit pause while wearing riding gloves (I do wish the button was a little bigger). They don’t sit directly on my ears, so I can hear my surroundings better than with ear buds. I put my phone about halfway down the longside of the 100’x200’ ish arena and don’t lose connectivity while I’m riding around. I have had one or the other side cut out for a couple seconds here and there, but not bad at all. I really wanted something with a charging case so I can just keep them at the barn and charge periodically (the case has charge indicator lights so I can see when they’re getting low).

I am going off on a tangent here, though I know that OP wants an over the ear solution. So bear with me for a paragraph.
Ear anatomy, and particularly outer ear canal anatomy varies. I learned this 50 years ago when I could not hear well through a stethoscope or a disposable earpiece for monitoring patients under anesthesia. The audiology section of the hospital made custom earpieces for anesthesiology residents so I went to them. I learned that the angulation of my ear canals actually obstructed the “universal” outer ear devices. They took impressions of the insides of my ears and made custom devices. Hearing and stay-in-the-ear problems were solved.
So if you are unable to find a headset, perhaps the standard device could be modified to make it fit and be retained in your ear better for you.
I love my Comtek. It was a bit more expensive than the CeeCoach, but I’ve been using it 3-4x weekly for 15 years.

I recently bought my own CeeCoach set just to be able to use Bluetooth headphones. My trainer has their own but it is communal plug in headphones and I always manage to pull the wires. I personally wouldn’t go with an over the ear option. I don’t know that you are going to get good comfortable ones for $50. I have the Samsung buds and they are fabulous! I also like that I can wear just one and be able to hear environmental noise as well. I don’t like not being able to hear something that may startle my horse.
outerbanks, thanks for this link. I despise earbuds, but I’d like to use my Pivo for lessons. This might do the trick. Earbuds make me sore within 10 minutes!
If you search for “open ear” or “bone conduction” headphones or earbuds you’ll find lots of options. If I wanted to listen to music with these I’d probably consider a higher-end pair, but these certainly do the trick for my purposes.

I bought my own CeeCoach set as I didn’t think my trainer had the Coach 2 that are BT capable. But absolutely you could just buy a single one to connect if your trainer has the Coach 2.
They do but I just looked and can’t believe how expensive my Samsung Galaxy buds were! I mean they were on sale at Costco but still… Now Costco has some Skullcandy buds for $70 right now and I have always been happy with my past Skullcandy purchases.
