Most work visas (H1-B etc) are for specialty occupations, ie those that require at least a bachelor’s degree.
Best thing would be to find an immigration attorney near you. They should be able to give you an idea of what you could apply for. My experience was that for an attorney to give you an idea of your options was usually free of charge, but of course if you want their help applying then that will incur fees.
Your potential employer has to petition for a temporary work visa. You may be able to come in with an H-2A visa - temporary agricultural visa, since it’s a horse-related job.
