Cantle shape question

I’m curious about the different size and shapes of cantles. I get the seat choices; deep seat, medium or flat seats, twists, etc.
But why are some cantles so very high and round, some are lower and some are almost a rim around the back.
Think dressage saddles, why are they among the highest in the back? Is this style or function?
If the idea is to go higher to hold you in the saddle more securely, wouldn’t many saddles have this option (Jumping?)
My thought is this is more about style/discipline for the shape?

Think about where the riders tush is in relation to the seat. A jump rider has to be able to get forward on takeoff and drop back toward the cantle on descent. With a very high cantle you don’t have the freedom to do that. Bank jumps and drops require even more flexibility in rider position so eventing saddles are even flatter and sometimes have an extended (backwards) cantle. Dressage riders, by comparison, stay in place so they have the option of choosing a saddle that helps them keep their position.
Square vs round cantles are style. US riders prefer square but in other parts of the world round is more popular.

Square cantles are usually the choice when the cantle is low - they give more clearance and support for a flat seat. Round cantles are usually the choice when the cantle is higher, because the round shape gives more ease to get the leg over the saddle and the like. FWIW, square cantles are also easier for a saddler to make.
