Immune systems go down when suffering an allergic reaction so your cat could have picked up a virus anywhere from leaving your house, to the vets and back again. Your cat could also have allergies to other animals or anything outdoors during your vet trips. Taking a pet to the vet is like us going to the doctors, there is a waiting room full of sick people and there’s a good chance you’ll pick something up.

Does the vet wash their hands in front of you once entering the room? Does the examination table look recently cleaned?

Is your cat the nervous type? One of mine has an anxious personality in general, and she’s prone to herpes flareups following stressful situations (vet, other cat visiting, family out of town etc).

What I’ve read is that, as kremeroyale said, feline “colds” are often caused by a herpes virus which never really goes away, and can flare up in a stressful situation. (Note: my cats must never be stressed because even the one who came from a shelter with a nasty upper respiratory infection never had a flare-up after that.)
Maybe something about this vet’s place stresses your cat more than others have? It could be something that you’re not aware of, with your puny human senses.
