The SE31 is likely a 2Gs Mademoiselle with a semi deep seat.
PA is your panel code,
105 is not a standard area for CWD (their standard setup is 700/200/300) so could mean that 95mm of foam removed from front which would be quite a lot for your 200 setup in front, or, more likely, a 100 panel setup with 5mm of foam added. I’d call a CWD rep to confirm. I believe @Belmont is an ex-rep and may be able to opine.

Is removed if generally creates more room for movement; and when foam is added it “thickens” the area therefore less room for movement? You are right 105 is unheard of, must be a special cuatomization of some sorts
Yes, adding foam increases the space/size of panel to “fill” in space. I wouldn’t necessarily say it “decreases” space for movement but rather correctly adjusts size of panel to fit a space between saddle and horse for proper fitting for that horses’ shape and movement. I have a Voltaire I added foam to as a need to fill in space for a gappy shoulder. Worked beautifully for my guys’ shape. Removing, as you said, creates more space between saddle and horse to allow for more movement/larger body part/proper fit of saddle against shoulder/back/wither to accommodate.

Unfortunately, I’m not sure what a 105 is. It’s got to either be new or a super special thing, though if it was new I’m not even sure what it would do. I can ask a friend that is still a rep with them though!
Okay, so a 105 is 5mm of foam removed from the entire saddle.
We just used to call them -205, but I guess they’ve been renamed to avoid confusion. LOL
