I saw it in an email, but couldn’t find descriptions of what the different categories are. Especially the dover model and barn scene ones.

Not sure what you mean…? I expect that Dover Model would be someone displaying Dover products on their horse and/or themselves and Barn Scene would be photos taken in and around a barn. If you click on the tab for last year’s winners, the winning photos by category are posted.
