Farriers who jog horses

This is a farrier question regarding performance horses and the importance of “the jog” before they shoe and following the shoeing: why is this done and what importance does it have on the “angles” everyone is talking about? How do I know if my farrier is really good or just “talking” the theory? Please don’t tell me the AFA is the best answer to find a “reputable” farrier because there are some farriers listed there that I have had bad experiences with and many great farriers I have known are not listed. Thank you.
