Has anyone here bred a mule foal? How does it differ from breeding a horse foal? I know a mare is not likely to accept a jack so AI is the most usual way of going about it. Are there any other things to consider about covering or the pregnancy?

Same. I am seriously considering putting my mare in foal to a jack but it’s so hard to find expertise on this, particularly in the UK where mules are actually rather uncommon.
Huh. I never knew that about mares and jacks. Mule breeding was at its height in the 19th century and I am sure they would have pasture bred their mares. Maybe the problem is if the mare has never seen a donkey. I expect if you left a jack out with a herd of mares for six months they’d all figure it out! Not so useful for today’s horse owners though.
Mules are still quite popular here in Missouri. IIRC the state fair even has a large division just for mules. I seriously doubt that all those mules were conceived by AI.
I’m pretty sure even in the 19th century, they employed mostly in-hand breeding techniques.
You could ask for advice from the British Mule Society who try to cover all things mule in the UK
