There are some good Facebook (check out Horse Riding Tours around the World) groups to that end, but be forewarned, European riding vacations fill up fast! (I have two students looking).
We had an amazing trip with https://www.ridesicily.eu in Sicily. We did a pretty adventurous week long ride, though they also offer day rides, and the husband and wife team who run the business are great. He’s Sicilian and she’s English. Great horses, comfy saddles and of course amazing food.

I like both companies and have used them several times (as well as several others). Both take horse welfare and human safety very seriously but also offer quality, interesting and fun vacations in Italy and across Europe (and around the world). You can phone them and speak directly to people who have good knowledge of the rides offered, frequently based on personal experience. They will organise international flights, pick ups from airports etc
My last trip was a week in Sicily based in a hotel up a hill side, surrounded by olive groves, with a pool and distant views down to the sea. The island was packed to bursting with history, volcanos and interesting food (as a cultural cross road). That was through Unicorn Trails.
Another good one was a week long trail through Tuscany, often staying at agrotourismo farms with the horses close by. That was through In The Saddle.
What you will find is that rides, all around the world, are frequently the same ones offered though different agents in different countries. In my experience American agencies invariably charge the highest. It is worth looking into the UK prices.
Encourage your students to take a look at Epona in Spain if they have any interest in dressage. I did the train and trail program a couple of years ago and would cheerfully go back. They have a number of different packages and the instructors are all BHS trained. Great lessons, great horses.
