French is a tough language for English speakers to pronounce correctly. I think you could get away with: Anabelle, Bernadette, Clementine, Dominique, Evangeline, Francie, Georgette, Heloise, Isabelle, Josephine, Lucile, Maxine, Natalie, Odette, Rosette, Simone, or Violette. Add descriptors / modifiers as necessary.
Clementine has an “old-timey” or “old West” feel to it so that might be attractive to some buyers.
Try to look into the place this horse came from. There are several towns with “French” names in “Mustang Country”
A namve like that will tell more of a story than some of the others suggested.
In Oregon several come from the Steens Mountians Start there

Aurelie (or Aurelia, which I prefer but isn’t the French version of the name)
Agente Provocatrice (the feminine of “instigator”)
Carte Blanche (having free rein to chose what you want)

Those are all good ideas. I think I’d vote for Alouette since yes, it’s more familiar. Speaking as an erstwhile occasional show announcer, Ratatouille I’d have no trouble with but has a high probability for butchering, and ‘is’ harder to roll off the tongue.
I recall shows I announced where there was a horse named ‘Travalger Square.’ They really meant ‘Trafalger Square.’ So they were annoyed when I announced it the way they had spelled it. I had a 50/50 chance, and wrongly assumed they intentionally misspelled for some insider play on words.

Or Madame Mustang or Mademoiselle Mustang. I WOULD be cool to have her breed in her name so when she knows, no one would guess what she is.
