Are there any international sickle hocked dressage horses? Yup, Jazz and pretty much all of his decedents. The Ferro’s are also often like this. Lots of the Dutch horses are sickle hocked.
Most top horses have good angles behind (dressage). Obviously there are exceptions but the ones that succeed anyways make up for it in other ways and usually the deviation isn’t extreme. Extreme in either is not a good place to start. FWIW I know of more dressage horses that have broken down with straight hinds rather than sickle. Sickle puts more stress on the hocks but hock arthritis is pretty treatable for a long time. Plus, if they are somewhat sickle hocked but closed well up high in the hind end then that tends to make a bit difference in the way in which they hold up. Straight hinds usually result in suspensory issues and once a dressage horse has a hind suspensory injury it is game over, and the stress to the suspensories is the same regardless of how well built the horse is higher up in the hind end.
