I want to get some tall boots for Para-Dressage. Which are good tall boots for dressage with a zipper?
I love my Cavallos, front zipper !
A lot of polo boots are made with a front or side zipper:

Some also close with hook-and-loop fasteners:
If you are interested in polo boots, these look like they could be well adjusted variously along the leg:

I have a pair of Dehners. I love them, they custom fitted over my ankle brace, have front zippers and broke in very quickly. I highly recommend them!

I have a pair of these made by Dehner:

If it’s within your budget, there’s nothing better than Dehner. They’ll make them to your measurements, which is an unbelievably comfortable fit. They last forever; you can go to EBay and buy Dehners made 60 years ago which are still usable.
Dehner also makes a traditional front-zip polo boot:

They’ll also put a zipper in the back of a traditional dress boot. They aren’t enthusiastic about it because the zipper is prone to wearing out or breaking compared to an all-leather top, but I know a woman who has been riding in a pair of them regularly for at least 5 years and if the zipper breaks it can be replaced. The back-zip dress boot gives the most traditional look and in fact it’s hard to tell that it has a zipper. Some other companies also make back-zip dress boots but my friend’s Dehners are the only ones I’ve actually seen and doubtless quality varies from one brand to another.
