can anyone point me in the right direction of a gastric fluid test (through cornell or UC davis) or if anyone has experience with this and could share. that would be great!

What are you hoping to test for? That will help folks direct you. pH testing of gastric fluid can be done in-clinic or stall side during a scope if your vet is equipped to do it. They just use a syringe to draw a sample of fluid once the NG tube is in place.
If you want cultures/bacterial analysis… that would probably require an outside lab or a visit to a University vet hospital.
