Is anyone feeding Unbeetable Complete to their working horse? I have found lots of conversation about it for horses are that are retired/semi-retired but not many in full training.

Use it for all of ours combined with Enrich. A nice side affect is phenomenal hoof growth and density.
How much UC and Enrich are you feeding? Are you thinking about the Forage Only?
UC is a fully fortified feed
I had been feeding their Beet Pulp/Alfalfa product along with Purina Enrich. The store didn’t have that last time only the Unbeetable Complete so I brought home a bag to feed.
My mare probably doesn’t qualify as full training with our 4 day a week riding schedule now but she’s done fine on it. My round bales have been “hit or miss” this year and the current one is a “miss” so I like knowing that she’s getting some known nutrients right now.
