Where can I board/ride outside the Long Island H-J box?

My horse and I really need something other than the typical, limited, ring-riding only H-J options in Nassua County. Is there anywhere farther east, or north, that would offer us more variety? My horse is easily bored with flatwork lessons, but his attitude changes entirely when he gets outside a ring, or when he jumps, even though he is still learning. I am posting this on the Hunting Forum because even though neither of us has ever hunted–nor are we ready to at this point–I am looking for a boarding stable that has access to fields or trails, along with an instructor who would be sympathetic to the needs of a still-green horse and rider. Where do people who ride with the Smithtown Hunt keep their horses? There must be an untapped secret horse world that the hunter-jumper-dressage folks don’t know about without going up to Millbrook or Old Chatham. Thanks, all advice appreciated!
