Anyone know where to look to find out more about the horses who are competing in each discipline from each country? Breed, gender, age, and anything else that is of interest?

They just put out a magazine with 130 or so pages of Olympic horses. Breeding when available, photos, and rider info.
If you look at the individual scores on the Olympic website (currently only eventing), you can click the plus at the right of the table to expand information for each rider’s horse. They have breed, sex, age and sire.

There are several threads on the breeding forum (I did show jumping and eventing; dressage is spreadsheet that is on one thread) with the breeding of all the Olympic nominated horses. There are five each for show jumping and eventing.
