Would I be violating any policies if I put a link to a description of an unpaid working student type position available in my signature? I don’t want to break the rules!

Since the person would assumedly be receiving training, learning experiences, etc., in exchange for their work, they’d be receiving compensation of some form, so it wouldn’t really be appropriate.
We’re planning to loosen the strings a bit when we tweak some of the forums’ offerings in coming months (not that it helps you now!), so their may be some other options for advertising such positions then…
