Not to mention, a couple of mine are scarred up by their halters precisely because they played rough pulling said halters off of each other.

I really hate to say this but that photo of Valegro with his mouth open really does look like he has mouth lesions. They don’t normally show on the outside of the lips, that would be if there was only pinching. They are on the inside just like that. 
CDJ does not have a reputation of having good hands. Edwina Scissorhands is a nickname some have given her. I would not be surprised one bit if the mouth showed a history of bad hands. Plus CH himself uses (he’s written about it) left/right rein actions. Which can easily translate to seesawing. He calls the result LDR. I call the result BTV.
