One of the people in the group out here has been to chef school, so maybe we can get more recipes.
Forget about Jason Mraz, he is a Waschlappen
better to buy from Tom Selleck. He has an avocado farm.

But is it an open trailer? Inquiring minds need to know.
Even though it is too late for The Pony, The Saddle, and The Trailer to join up and travel to Vegas to see the WC, we should at least set up a gofundme for the Trailer so that it can get a top put on for traveling especially down there in the hot Florida sun.
After all, another Cother in Arkansas has her thread soliciting her own gofundme to take care of all those horses she is breeding See her thread on this same “off course” forum.
The Trailer deserves to be closed and covered. WaWWs will contribute to doing so.
Can you really freeze guacamole and have it taste good? It turns brown if you don’t put lemon on it when it is fresh. Has anyone on here frozen it successfully without having to add that stuff that preserves salad bar items and is harmful to humans and animals? Don’t ever take the carrots from the salad bar back to your horses. And ponies, of course. Those carrots are treated with the additive that prevents them from turning brown. Ditto apples and other veggies.
I don’t believe sulfates are allowed on salad bars anymore. Too many people with allergens. Treatment now consists of ascorbic acid (vit c)
And guac freezes very well.
I don’t think carrots turn brown from sitting out anyway. Sulfites were used on apples, bananas, and lettuce. The use of them on salad bars was banned by fda in 1986.
There are like, 4 or 5 threads on Off Course that have had the potential to morph into a train wreck and none of them had the oomph to get there. Is it the weather?
Also, those of you in Vegas: what are the odds that the OP here ever comes back?

sulfites were banned in FRESH fruits and veggies, some of them. That’s sulfites.

The cut carrots on salad bars do after a short time.
So what is this treatment you are talking about that is not good for horses?
If you agree sulfItes are banned. I made sure I typed it correctly for you.
Oxygen exposure is what turns the guac brown. If you smooth it flat and then cover it with saran wrap with the saran wrap covering entirely and touching the surface of the guac-- you can freeze/refrigerate it without it turning brown.
Or use lemon juice.
Just rename that pony Guacamole and get it over with.
And is he still for lease?

My favourite guacamole recipe
3 avocados
Juice of 1 & 1/2 limes
1/2 cup of chopped sweet onion
1/3 cup chopped grape tomatoes
Pinch of salt
Garlic, cilantro and chilies to preferred spice level
The crunch of the grape tomatoes and sweet onion really makes this work. It’s amazing[/QUOTE]
This sounds fantastic. I used a mix to make mine the other day and was a bit disappointed. Still good on a panini but not ballin’.

Yup. The trick to storing guacamole in the fridge or freezer without it turning brown is excluding air contact - which means I put it in a bowl and then put a piece of plastic wrap on the bowl, but I push it right down against the surface of the guacamole, so all of the exposed surface of the guacamole is touching plastic wrap. Then I usually put another lid on just to keep the plastic wrap in place.
To freeze, you can do this, or I like to freeze things flat in plastic zip bags - so put guacamole in bag, squeeze out the air, then pat the guacamole out until you have a nice flat shape. Freeze flat, then you can stand it up on one side like a book and have sort of ‘bookshelf’ arrangement of frozen sauces and so on. Lets you store a lot in an easily accessible way. Plus, most stuff when frozen flat like that is easy to break off a chunk from frozen, so you can just break off a tablespoon or two if that is all you need, and not defrost all of it.
(I regularly buy Trader Joe’s Avocado’s Number guacamole and freeze it, too, since TJ is not conveniently located for me. That freezes just fine in the normal packaging it comes in. Just leave it sealed up while it defrosts and you’re good to go. I usually try to let it defrost overnight in the fridge, but if you’re going to eat it ASAP once defrosted you could leave it out on the counter, too. It doesn’t take long to defrost so if you put a package out when starting to cook other burrito fillings, it would be acceptably defrosted by the time everything was ready, ime.)
Guacamole left out in the open will turn brown. This is why we avoid open trailers.
I will recommend this thread to my niece.
